Have you tried green smoothies? When I first heard about them a few years ago, I was like…ewwwww! Spinach in a smoothie?!! But, I finally tried them and you know what? You really cannot taste the spinach! I promise!
One of my new years resolutions was to eat more vegetables and this is such an easy way to get greens in your diet. I am not naturally someone who loves greens so this works awesome for me. I love fixing this smoothie for Henry as well. He loves it and afterwards I give myself a high five because my kid ate spinach!! Sure, he doesn’t have a clue that it’s in there, but the important thing, (to me) is that he got some much needed nutrients from fresh whole food! And I am totally not above hiding vegetables in my kids food. No shame in my game!
This also provides probiotics and protein from the greek yogurt and lots of yummy vitamins from the berries. Win. I make this smoothie as part of Henry’s snack about three times a week.
Strawberry Smoothie with Greens
1 handful spinach
approximately 1/2 to 3/4 cup frozen strawberries
1 small container vanilla flavored greek yogurt (oikos is my fav for this)
3/4 cup water
Put all ingredients in blender in the order listed and blend on high until smooth. Putting the spinach in first helps it to get mixed up properly so the leaves don’t fly up and stick to the sides. I prefer the texture of my smoothies a little thinner since Henry shares this. (He drinks it better that way.) But if you prefer a thicker smoothie just reduce the amount of water you use.
The vanilla yogurt addes just the right amount of sweetness to this smoothie. You could also mix this up and add whatever fruit you prefer. We also really like blueberry!
Seriously so easy! No chopping or prep work required! Just dump everything in and you’re good to go!
I like to pour ours into a fancy glass with two straws for sharing. Which Henry thinks is awesome!
