What we’re eating this week! Mostly shopping from my pantry because our air conditioner had the big one last week and it was $$$ to fix! Soooo, spending freeze. happening. now.
Monday – Baked salmon, roasted asparagus and roasted potatoes
Wednesday – Carnitas

Thursday – White Beans with spinach and kielbasa
Simple. Inexpensive. Delicious. Win.
I don’t have a recipe for this as I literally just throw it together, but I’ll try to write down exactly what I do and share it soon!
Friday – Nachos made with leftover carnitas
I usually only plan for four or five days and then regroup at the end of the week and restock for the weekend. I used to try to do a full seven days, but my brain just can’t think that far in advance and it seemed we ended up with a lot of wasted food and a lot of eating out on the weekends. I know going to the grocery store twice a week isn’t everyone’s thing, but it works for me!
