Meal Plan Monday

Hello!

Hope the weekend treated everyone kindly as we get this new week started!  We’re recovering from a weekend birthday party with cousins galore!

Here’s what we’re eating this week!

Monday – ground beef in brown gravy over mashed potatoes, corn, homemade bread (home food at it’s best y’all)

Tuesday – Homemade chicken nuggets with oven fries

These chicken nuggets from SkinnyTaste are hands down the best I’ve tried for baked nuggets!

Wednesday – Spaghetti with meatballs, roasted broccoli, bread

Thursday – Roast in the crockpot with potatoes and carrots

I use this recipe for pizza crust and sauce and it is so good and easy! The real magic is that it takes only an hour to make from start to finish though!

One more year…

As my facebook and instagram feeds have been flooded the last couple of weeks with pics of kids starting school I can’t help but think about the fact that next fall Henry will be starting pre-kindergarten. Which means I only have one year left of him home with me every day. When I think about that, I kind of go into a panic. Where on earth have the last 3 1/2 years gone? I swear, I only blinked.

There are so many things I wanted to teach him during these precious years we have had together. And I can’t help but wonder…have I done that? Have I taught him all the things he needs to know before he starts school? Have I used this time wisely or have I squandered it? Have I given him a solid foundation? I certainly hope and pray that I have.

I think about the way God gently laid the idea on my heart that I needed to stay home and care for my babies when they came along. I will always be so very grateful for the high calling he placed on my life.

Menu Plan Monday

What we’re eating this week! Mostly shopping from my pantry because our air conditioner had the big one last week and it was $$$ to fix! Soooo, spending freeze. happening. now.

Monday – Baked salmon, roasted asparagus and roasted potatoes

Tuesday – Going to give these stuffed bell peppers by Trisha Yearwood a try. Think I’ll throw them in the crockpot though.

Make this recipe and you can’t go wrong. My husband and I are basically obsessed with it.

Thursday – White Beans with spinach and kielbasa

Simple. Inexpensive. Delicious. Win.

I don’t have a recipe for this as I literally just throw it together, but I’ll try to write down exactly what I do and share it soon!

Friday – Nachos made with leftover carnitas

I usually only plan for four or five days and then regroup at the end of the week and restock for the weekend. I used to try to do a full seven days, but my brain just can’t think that far in advance and it seemed we ended up with a lot of wasted food and a lot of eating out on the weekends. I know going to the grocery store twice a week isn’t everyone’s thing, but it works for me!

Summer Health Monday

So I have a confession. I have a sweet tooth. A REALLY BIG sweet tooth. Donuts, chocolate and all things sugary just make me happy! When you are trying to be healthier though, these things don’t fit well.

I have tried eating more fruit to satisfy the need, but let’s face it, it’s just not the same. Plus, there is nothing more frustrating than bringing home some yummy looking fruit from the store only to discover the only yummy pieces are what was showing on top and everything else is overripe.

I am happy to let you know, I found a solution for me! Fresh picked! Last summer Kristen and I took our kids and our mom to pick fresh blueberries. It was so much fun and they tasted like candy! I am convinced it was the ability to pick and eat them straight off the bush.

With summer here, the abundance of fresh fruit is upon us and I urge you all to take advantage. Farmers markets and farms all over are offering fresh fruit and veggies now and trust me, you won’t regret taking your business to them!

Summer Health Monday

Nothing new this week ladies. Let’s face it. It’s a holiday week and we will all be going to cookouts, on vacations and such so if we can maintain what we have already been doing, I think we need a pat on the back!

On thing I did want to share with you today is a great new show I have found! If you have never watched Tia Mowry at Home on the Cooking channel you are missing out! Most of her food is really healthy but still so good! I watch it with my kids and they actually ask me to make the things she cooks because they look so yummy. Plus, I get to relive the memories of my youth watching Sister, Sister. What could be better than that combo?? 😉

Summer Health Monday!!

Well week three, here we come! This week I am going to try to up water intake to 80 ounces a day this week and keep up the same exercise that I have been doing. I hope you will join me!

One other area that I feel is so important to your health is de-stressing. Yes, I know, that is not a word moms use very much but it is one that we need to use on a regular basis. My favorite way to de-stress is this:

Ahhh, just looking at that picture just makes me calmer. I like to add some epsom salt and lavender drops, grab a book and either a glass of wine or my water and forget the rest of the world is there for just a few minutes. I typically wait until the kids are in bed so the likelihood of tiny fingers under the door is reduced. My honey has realized how beneficial my bath time is to me so he is good to handle any noises from the kids rooms while I am in there.

If baths aren’t your thing, find something that calms you. I hope you are enjoying this challenge and that you are feeling better as a result of it. Enjoy your relaxation this week!

Where I’m at right now

If you thought this was going to be a post about my latest vacation to the carribbean, I’m afraid you might be disappointed. It’s actually just going to be me rambling about what’s going on around here lately.

First off, I hit a deer last week. Or it might be more accurate to say that the deer hit me. I didn’t see it in time to even hit the brakes! Just all of a sudden saw the deer slam into the front of my car and that was that. Fortunately, we weren’t going very fast since we were in the middle of town, so we weren’t hurt. Honestly the kids didn’t even know anything had happened until the policeman showed up. So it is mostly an inconvenience since now we have to deal with insurance companies and body shops. Woohoo! (insert sarcasm font here)

In other car related news, my darling sweet Hannah utterly hates riding in the car. I mean hates. Like arches her back and cries when I try to put her in her seat. It’s brutal. This is a new one on me, because Henry looooved riding in the car and it was always good for a nap if needed. Having a little one that screams the whole time is unbearable. We’ve basically been on a travel ban because of it. Unless Kerry and I are both going in which case, I sit in the back with the kids and pull tricks out of my hat the entire time to keep her pacified.

After much research (read: googling) we decided to go ahead and upgrade her to a convertible car seat instead of her infant seat to see if that would help. We went with this one from Chicco:

It’s supposed to be here tomorrow and I am soooo excited to see if it works! Fingers crossed!! We’ve got places to go this summer darn it! 😉

Blueberry picking heaven. Katie and I went last year with our mom and the kiddos and it was sooo much fun! And oh my word, the best tasting blueberries I have ever had! I don’t even really like blueberries, but these, I could have eaten the whole bucket myself! I won’t say how many I actually ate, but I was pregnant. I think eating buckets of blueberries is actually recommended during pregnancy, no?
